How can I set the task priority and change the default value from ‘medium’ in my task list?

You can change the task priority of a user task in the priority attribute of a user task: User tasks | Camunda 8 Docs

Implementation → Type → Zeebe User Task
After that, the “Priority” property will appear under “Assignment” (the last option).
