Is a Undefined Task handled the same way?
Basically yes.
But i would consider that an undefined task would be a temporary state. As if you haven’t yet decided what do to with it and so probably wouldn’t deploy a process with an undefined task.
A manual task would a choice made by the designer which indicates that nothing here happens.
